My cold-smoked peppered bacon. 8 day cure, 2 day air dry, 2x 4hr cold smoke with a day of rest between. 1 week of mellowing in a gallon bag in the fridge. Easily the best bacon I've ever tasted.
galleryHome cured and smoked.

Face Bacon
Pork jowl cured with brown sugar, salt, pepper, and #1 for 7 days. Smoked over cherrywood and pecan to 150. Cooling in the fridge and I’ll slice into it tomorrow.
Bacon from feral hogs?
I keep getting ads from a company that sells traps for feral hogs. Feral hogs don’t exist in my area but it makes me wonder if these are free bacon for the taking or if commercial bacon is different from the wild stuff.

Cured with just kosher salt and maple sugar
Forgotten doordash order
So someone in my building has forgotten their doordash order and there are six things of bacon and three dozen eggs. It's been a little over 18 hours in 40°F weather. The bacon is Factory sealed and uncured Applewood smoked bacon. Do y'all think the eggs and bacon are still good? Can I cook or freeze the bacteria away? It's just seeing food going to waste nowadays kills me. Side note, i work in a restaurant. So i know FDA guidelines. But best buy and expiration dates are kinda nonsense sometimes

The most perfect start to the day
What could be better than bacon to start the day? Bacon with scrambled eggs cooked in bacon fat. It was epic! 🤤
